Method


  1. Cook the rice according to directions.

  2. Meanwhile, in a large frying pan, sauté the onion, garlic, herbs and spices until onion is soft and translucent.

  3. Add the capsicum and celery to the pan. Continue to cook until veggies are soft. Add the beans.

  4. Once the beans are incorporated, stir through the chopped tomato and vegetable stock. Bring the mix to a boil, then simmer for about 10 - 12 minutes, or until most of the liquid has evaporated. Season with salt and pepper.

  5. Spoon the rice into bowls, top with bean mixture, and avocado. A squeeze of lime or fresh coriander wouldn't go astray either!
