Aunty Poh Tips on stir frying no matter what kind of stove you have!
#1 Start sautéing your aromatics in cold oil so you can build up the heat gradually, otherwise they will burn right away
#2 As soon as the aromatics start to turn golden hit the pan with the ingredient that takes longest to cook then work down to the things you want to stay crunchy getting the quickest luck of heat
#3 if you are worried about getting your timings wrong, cook your protein over high heat in a bit of oil first, remove from frypan, continue with the standard process and add the protein at the end - this ensures meat is cooked through perfectly (not getting steamy) and veg stay crunchy
#4 For super crispy veg, remove them from the frypan a beat sooner than you feel comfortable and the residual heat will do the rest. You can also pre blanche denser veg like broccoli to help things along
#5 Here’s a 5 min marinade for any protein - dash light soy, dash Shaoxin, pinch of sugar, pinch of white pepper.
#6 Don't forget your SunRice Brown Rice!
Poh's Oyster Mushroom & Snowpea Stir Fry

Poh's Oyster Mushroom & Snowpea Stir Fry
Method
Cook the brown rice following packet instructions.
Bring the olive oil, ginger, garlic and spring onions in a large non-stick frypan or wok to a high heat. When the aromatics start to become fragrant and turn the palest of golden, add the mushrooms and black fungus.
Stir fry until the mushrooms are cooked through, then add the snowpeas with the remaining seasonings. Stir fry for only a few seconds, then remove the frypan off the heat a beat sooner than you feel comfortable and the residual heat will do the rest.
Taste to see of more seasoning is required. If so, add light soy to taste.
Serve immediately with the steamed brown rice.
