SunRice and Lyndi have teamed up again for another Mystery Box challenge!
In the box this month, we have added an avocado, strawberries, corn, lime, coriander our delicious SunRice Steamed Brown Rice!
Lyndi has come up with this delicious Portuguese chicken dish with a side of strawberry salsa that is sweet and tangy. Ready in under 10 minutes, this recipe is perfect for adding variety into your diet while still including nutritious wholegrains.

Lyndi's Portuguese Chicken with Brown Rice and Strawberry Salsa
Method
Heat a large frying pan on medium-high heat. Add 2 tsp of extra virgin olive oil.
Slice chicken into strips, coat with Portuguese spice and add to the hot frying pan. Cook for 5-6 minutes or until brown - flipping halfway.
Meanwhile, combine the remaining ingredients to form a salsa.
Heat SunRice brown rice in the microwave.
Serve all ingredients together!
Notes
This recipe is naturally gluten-free!
Don’t have a microwave? You can also heat up the rice in a small saucepan on medium for 1-2 minutes. I like to add 2 tsps of water to prevent the rice from sticking to the pan.
This recipe is dairy free and nut free.
