SunRice and Lyndi have teamed up again for another Mystery Box challenge!

In the box, we have added white fish fillets, snow peas, thyme and lemon as well as two flavours from our NEW Infusions range - Brown Rice & Quinoa infused with Lemongrass, Coconut and Chill and Brown Rice & Red Rice infused with Chilli and Garlic!

Lyndi has come up with this delicious one tray lemon and garlic fish, perfect for a midweek dinner and cooks in just under 20 minutes! A delicious meal full of flavour and whole grains which we think you will love!

Infusions Chilli Garlic website Infusions lemongrass coconut chilli website

Method


  1. Preheat oven to 180 degrees Celsius. Open Infusions and add rice into the bottom of a baking tray.

  2. Top with fish and snow peas.

  3. Mix together marinade of lemon juice, garlic thyme and 1/8 tsp salt.

  4. Cook for 12-15 minutes or until cooked.

  5. Notes:

    You can also simply heat SunRice Infusions in the microwave.
    This recipe is naturally gluten free!
    Serve with a side salad for extra veggies.
    This recipe will work with any fish fillets you like. Or swap fish for chicken strips.
